Salsa recipes are a must when cooking Mexican cuisine.  All salsa recipes contain onions or chili.  A really good salsa recipe may contain both ingredients.
 
Traditional Salsa Dip
 
Ingredients:
• 3 medium tomatoes (chopped) - makes about 2 1/4 cups
• 1 small green bell pepper (chopped) about 1/2 cup
• 3 cloves garlic (chopped)
• 1/4 tsp salt
• 2 to 3 tbsp lime juice
• 2 tbsp chopped fresh cilantro
• 1/2 cup red onions (sliced fine)
• 1 tbsp jalapeno chillies (chopped fine)

How to:

• Combine all ingredients into a bowl and mix well
• Cover and refrigerate for at least 1 hour in order to blend all flavors
 
 
Tropical Salsa
 
Ingredients: 
• 2 cups pineapple pieces (chopped into 1/2 inch)
• 1/4 cup red onions (chopped fine)
• 1 small red chile (seeded & chopped fine)
• 2 tbsp fresh cilantro or coriander leaves (chopped)
• 1 small red capsicum (chopped)
• 2 tbsp lime juice

How to:

• Combine all ingredients into a bowl and mix well
• Cover and refrigerate for at least 1 hour in order to blend all flavors
