Bread Pudding
Ingredients:
• 1 1/4 cup shredded cheddar or Monterey Jack Cheese
• 1/3 cup silvered almonds
• 6 pieces of bread (toasted and broken into pieces)
• 1 tsp ground cinnamon
• 2/3 cups raisins
• 3/4 cup brown sugar
• 1 1/2 cup water
How to:
• Heat oven to 350 degrees
• Grease a 1 1/2 quart round casserole dish
• Using a saucepan, mix brown sugar and cinnamon
• Heat to boiling, stir occasionally
• Boil uncovered for 3 mins, stirring
• Add in cheese, raisins and almonds
• Remove and set aside
• Spread 1/3 bread pieces in the casserole dish
• Sprinkle 1/3 of cheese mixture over
• Repeat with bread pieces and mixture at least twice
• Pour sugar syrup over layers
• Bake for 20 to 25 mins
• Test for doneness when knife is inserted in center and comes away clean
Cinnamon Chocolate Ice Cream Pie
Ingredients:
• 1 quart cinnamon, vanilla or chocolate ice cream (softened)
• 20 chocolate Oreo wafer cookies (crumbled)
• 1/4 cup margarine or butter (melted)
Cinnamon Chocolate Sauce
1/2 cup heavy whipping cream
• 1/4 cup sugar
• 1 ounce unsweetened chocolate
• 1/2 tsp ground cinnamon
How to:
• In a bowl, mix the cookie crumbs and margarine or butter
• Using an ungreased pan (8 X 2 inches), press the cookie mixture onto the bottom
• Freeze for 10 to 20 mins
• Spoon the softened ice cream into the cookie crumb mixture and smooth the top
• Cover and freeze dessert for 2 hours or till firm
• Run a spatula along the side of the pan to loosen then remove completely from pan
• Serve dessert with cinnamon chocolate sauce
• To make the cinnamon chocolate sauce, heat the whipping cream, sugar and chocolate to a boil
• Stir constantly, do not let chocolate burn
• Boil and stir for 30 seconds or till chocolate is completely melted
• Remove from heat and stir in ground cinnamon
• You can either serve the cinnamon chocolate sauce warm or cool
Cinnamon Shortbread
Ingredients:
• 1 cup self-raising flour
• 1/2 cup plain flour
• 1/3 cup almonds (toasted)
• 150g butter (softened at room temperature)
• 1/4 cup sugar
• 1/2 tsp ground cinnamon
• 1 egg
• 1/4 cup raw sugar
How to:
• Preheat oven to moderate
• Brush an oven tray with melted butter or oil, line base with greased paper
• Combine the plain and self-raising flour in a food processor and pulse for a few secs
• Add in almonds, raw sugar, butter and egg
• Process for 1 min or till mixture comes to form a dough
• Form 3 level tbsp of the mixture into balls
• Flatten the balls between the palms of both your hands (to shape round biscuits)
• Place on prepared tray
• Sprinkle biscuits with sugar and cinnamon
• Bake in oven for 10 mins
• Cool on a wire rack before serving
