Toasted Pepita Dip with Crispy Pork - Free Recipes
Ingredients:
• 1 large piece pork rind
• 1/4 tsp chili powder
• 1/2 tsp salt
For Pepita Dip
• 1 cup pepitas or pumpkin seeds
• 1 clove garlic
• 1 medium onion (chopped)
• 2 tsp lemon juice
• 1/3 cup olive oil
How to:
• Preheat oven to moderate heat
• Line two trays with oven foil
• Score the pork rind diagonally with a sharp knife
• In a bowl, combine the chili and salt
• Rub the mixture into the pork rind
• Place on 1 prepared tray
• Bake for 30 mins or till pork rind becomes crispy
• Remove, cool slightly and break into pieces
• How to make pepita dip: Place pepitas on the second oven tray
• Toast under the grill for 2 mins till seeds swell and pop
• Remove and cool
• Place pepitas, garlic, onion, lemon juice and olive oil into a food processor
• Process till smooth
• Serve with the crispy pork crackers
Tinga Poblano or Pueblan Pork Stew - Free recipes
Ingredients:
The Pork:
• 2 tbsp peanut oil
• 3 lbs boneless pork shoulder (cut into 1 1/2 inch cubes)
• 1 tsp salt
The Sauce:
• 3 chorizo sausages (cases removed, crumbled & sliced thin)
• 2 red onions (chopped)
• 3 cloves garlic (sliced)
• 1 can Italian plum tomatoes (partially drained)
• 1/2 tsp dried oregano
• 1/4 tsp dried thyme
• 1/2 tsp sugar
• 1 bay leaf
• 2 canned chilies chipotles en vinagre (chopped)
• 1 tbsp liquid from can of chipotles
• salt and pepper to taste
• 1/2 cup pork stock
• 12 small potatoes (boiled)
The Garnish:
• 1 ripe avocado (peeled & sliced thinly)
• 1 cup romaine lettuce (shredded)
How to:
• In a large pan, heat the oil and brown the pork well
• Drain off the oil from pan, add water just to cover pork then salt
• Cook, covered (over medium heat) for 30 mins or till pork is tender
• Drain off stock and reserve
• Set pork aside
• Place the chorizos in a pan and sauté, stirring to crumble more
• Add onions and garlic to sausages and stir till onions become translucent and wilted
• Add rest of the ingredients for the sauce (except stock & potatoes)
• Cook over high heat, stirring for 5 mins
• Stir in 1/2 cup of reserved pork broth and the pork
• Adjust seasoning and simmer, uncovered for another 10 mins
• Add the boiled potatoes, simmer for another 5 mins
• Remove bay leaf
• Serve with sliced avocado and shredded lettuce
Spicy Pork Roast - Free recipes
Ingredients:
• 2 lbs pork boneless loin roast
• 1/4 cup sugar
• 1 tsp dried oregano
• 2 tsp chili powder (add more for more heat)
• 1/2 tsp black pepper
How to:
• In a bowl, combine sugar, chili powder, oregano and pepper
• Rub dry ingredients into pork, making sure all surface is covered
• Cover and refrigerate for 30 mins
• Heat the oven to about 325 degree
• Place pork, fat side up, on a rack in a shallow roasting pan
• Insert meat thermometer (the tip should be in the thickest part of the pork, not resting in the fat)
• Roast uncovered for about 2 hours or till thermometer reads 160 degrees
• Remove from oven, cover with aluminum foil and let meat rest for 5 mins
• Slice meat and serve
