Salad with Avocado Dressing - Free Healthy Recipes
Ingredients:
• 1 large head of romaine (torn into bite-size pieces)
• 1 1/2 avocados (cut into thick slices)
• 5 to 6 cherry tomatoes (cut in halves)
• 3 green spring onions (sliced) - optional
How to make Avocado Dressing:
• 2 tbsp mayonnaise
• 6 cloves garlic
• 1 cup corn oil
• 1/2 cup water
• 1/2 avocado (peeled & pitted)
• 1/2 tsp salt
• 1/4 tsp pepper
• 1 bay leaf
• 1/2 tsp dried thyme
• 1 tsp lime juice
• 1/4 cup onions (chopped)
How to:
• How to make avocado dressing: In a food processor, puree the mayonnaise, garlic, onion, lime juice, thyme,
salt & pepper, bay leaf, avocado and water
• Add in stream of oil into mixture till it forms an emulsion (about 2 mins)
• Remove and chill in refrigerator
• Arrange lettuce on a platter, top with avocados and tomatoes
• Cover with dressing and garnish with green onions
• Serve immediately
Seafood with Rice - Free Healthy Recipes
Ingredients:
• 2 cups long-grained rice
• 2 lb fish (cleaned)
• 1 lb clams (in shell)
• 1 lb fish fillets
• 12 medium shrimps in shells
• 1 cup water
• 2 cloves garlic
• 1 small onion
• 1/2 cup oil
• 3 cup hot water
• 1 spring parsley
• 2 tsp salt
• 3 chili poblanos (roasted - membranes removed & cut into strips)
How to:
• Use a pressure cooker to cook the fish using 1/2 cup of water for 10 mins or till tender
• Alternatively: use a pot with 6 cups water, bring to boil, cover and simmer for 45 to 60 mins
• Drain fish thick skin
• Cut fish into pieces and set aside
• Steam clams in remaining 1/2 cup water in a covered pot just till they open
• Strain, reserve juices and set aside
• In a blender, puree garlic, onion and tomatoes, strain and set aside
• heat oil in small paella pan or large casserole dish
• Add rice and sauté till grains separate
• Drain off excess oil
• Add pureed tomatoes and cook, stirring constantly for 2 more mins
• Add hot water, juice of clams and parsley and salt
• When mixture come to a boil, add shrimp, fish and clams
• Cook, covered over low heat for 10 mins
• Adjust seasoning
• Add fish and chilies poblanos
• Cook, covered for 10 mins or till rice is tender but not mushy
• If necessary, add more water
