Eggs with Chorizo - Easy Mexican Recipes
Ingredients:
• 2 eggs
• 1 pinch of salt
• 2 tbsp oil
• 30g chorizo or other spicy sausage (casing removed)
How to:
• Heat oil in pan, add chorizo and sauté for about 4 mins
• In a bowl, beat eggs lightly and add salt
• Pour into pan and mix with the chorizo
• Cook for about 3 mins or just before eggs start to set, stirring occasionally
• Serve with crumbled queso fresco or mozzarella or fresh salsa and tortillas
Gazpacho - Easy Mexican Recipes
Ingredients:
• 8 medium ripe tomatoes
• 1 cucumber (peeled & seeded)
• 1 medium red onion
• 1 red capsicum (seeded)
• 1 yellow capsicum (seeded)
• 2 celery stalks
• 5 fresh jalapeno peppers (seeded & minced)
• 4 cups tomato juice
• 3 tbsp fresh lime juice
• 2 tbsp sherry vinegar or red wine vinegar
• 1 1/2 tsp salt
• low-fat plain yogurt (optional)
How to:
• Cut tomatoes, cucumber, red onion, red and yellow capsicum, celery and jalapeno peppers into chunks
• Pulse them in batches in a food processor till finely chopped
• In a large bowl, combine the chopped vegetables with tomato juice, lime juice, vinegar and salt
Tacos - Pork or Chicken - Easy Mexican Recipes
Ingredients:
• 1/4 lb boneless pork or chicken (cut into cubes)
• 1 clove garlic (peeled)
• 3 black peppercorns
• 4 cups water
• 3 tbsp coriander leaves (chopped)
• 1 onion (chopped)
• 20 corn tortillas
• salt to taste
• enough oil for frying
How to:
• In a saucepan, place the pork, peppercorns, garlic and 1 tsp salt
• Add water and bring to a boil
• Lower the heat so that the mixture simmers and cook, covered for 35 mins or till meat is tender
• Let cool, shred meat
• Mix coriander leaves with onions and season with salt
• Add meat to mixture
• Place a spoonful of meat mixture in center of each tortilla and roll up, secure with 2 toothpicks
• Slice each in half
• Heat oil, add taquitos and fry till golden brown
• Remove toothpicks and serve with guacamole dip
Spiced Turkey Burgers
Ingredients:
• 1 lbs lean ground turkey
• 1 small onion (chopped)
• 1 clove garlic (crushed)
• 2 to 3 tbsp green chilies (chopped)
• 1/8 tsp pepper
• 1/8 tsp salt
• 4 whole wheat hamburger buns (split)
• Chile Cheese Spread (see recipe below)
Chile Cheese Spread Recipe
• 1/2 cup Cheddar Cheese (shredded)
• 2 tbsp sour cream
• 2 tbsp green chilies (chopped)
How to:
• Mix all the ingredients for the Chili Cheese Spread, set aside
• In a owl, mix the ground turkey, onion, garlic, chopped green chilies, salt and pepper
• Shape mixture into 4 patties
• Lightly grease cooking surface of grill
• Cover and grill patties 4 to 5 inches from heat source (12 to 15 mins)
• Turn once till no longer pink in center
• Serve on toasted buns with Chili Cheese Spread
Corn and Crab Quesadillas
Ingredients:
• 6 flour tortillas
• 1 tbsp margarine or butter
• 1 package or 8 ounces cream cheese (softened)
• 1 can whole kernel corn (drained)
• 1 lb cooked crabmeat or 2 cups imitation crabmeat
• 1/2 cup fresh cilantro (chopped)
• 1/3 cup green onions (chopped)
• 1 jar pimientos (drained & diced)
• 1/2 tsp black pepper
• 1/4 tsp cayenne pepper
• Garnish with chopped cilantro leaves or sour cream
How to:
• In a medium bowl, mix the cream cheese with corn, cilantro, onions, pimientos, pepper and cayenne
• Fold in the crabmeat
• Spread 2/3 cup crabmeat mixture over each tortilla
• Fold tortilla in half, pressing lightly
• Brush both sides of each tortilla with margarine
• Cook 3 tortillas at a time in a skillet over medium-high heat for 5 mins
• Turn once, cook till light brown
• Garnish with sour cream and/or cilantro
Cooked Oysters on Toast
Ingredients:
• 2 slices bacon (chopped)
• 1 tomato (chopped)
• 1 to 2 serrano chilies (chopped fine)
• 1/4 cup onion (chopped)
• 1 tbsp tomato sauce
• 1 tbsp fresh parsley (chopped)
• 1 dozen fresh oysters (shelled)
• salt
• pepper
• 2 regular slices or 8 mini bread (toasted & buttered)
• 1/4 cup Mozzarella cheese (grated)
How to:
• Preheat oven to moderate
• In a small skillet, fry the chopped bacon till cooked through but not crisp
• Add in onion, tomato, tomato sauce, chilies and parsley till sauce has thickened slightly (5 to 8 mins)
• Add in the oysters
• Season with a dash of salt and pepper
• Continue to cook till oysters are cooked (2 to 4 mins)
• Divide the oysters between the slices of toast
• Sprinkle the grated cheese over them
• Bake in oven till cheese has melted (5 to 8 mins)
• Serve hot
