Grilled Marinated Chicken - Among the best grilling recipes, we like this one.
 
Ingredients:
4 pcs. Skinless Chicken Breast filets
1 Cup Bottled Margarita Mix
Ground Black Pepper as desired

How to:
 
Marinate chicken breast and leave in the refridgerate 2 hours.
When ready flavor with black pepper.  Grill until done on both sides.
Add with a serving of black beans and Place chicken breast atop of black beans and Mexican rice.
 
 
Chicken Fajitas
Ingredients:
•1 1/2 lbs chicken breasts (boneless, skinless)
•3 tbsp fresh lime juice
•1 tbsp olive oil
•6 whole wheat flour tortillas
•2 cups lettuce (shred fine)
•6 red onions (sliced into rings)
•1/2 tsp ground pepper
•3/4 tsp salt
•1 garlic (crushed)
•1/2 tsp dried oregano

How to:

•In a glass bowl, toss the lime juice, oil, garlic, oregano, salt and pepper
•Add chicken breasts into mix
•Cover with plastic wrap and let stand for 30 mins
•Preheat oven and wrap the tortillas in aluminum foil
•Warm them in oven for 15 mins
•Remove the chicken from marinade, get rid of any excess marinade
•Grill chicken breasts under broiler, turn once (10 to 20 mins)
•Cut chicken breasts crosswise on a slat into thin slices
•Serve with warmed tortillas and top with lettuce and red onion rings
 
Grilled Pork Tacos with Pineapple Salsa
Ingredients:
•1 lbs pork boneless center loin roast (cut into strips)
•1 tbsp butter
•8 flour tortillas
•1 cup Monterey Jack Cheese (shredded)
•2 tbsp butter (melted)
•Pineapple salsa

How to:

•Prepare the Pineapple Salsa and set aside
•In a skillet or pan, heat 1 tbsp butter till hot and bubbly
•Cook pork in butter (10 mins), stir occasionally till no longer pink in center
•Drain and set aside
•Heat over to moderate
•Spoon about 1/4 cup of pork onto 1/2 of each tortilla
•Fold in half over filling
•Arrange 4 filled tortillas in ungreased pan
•Brush with melted butter
•Bake till lightly brown (10 mins)
•Repeat with remaining tacos
•Serve with pineapple salsa
 
Grilled Fish with Melon and Jicama Salsa
 
Ingredients:
•1 1/2 lbs swordfish or tuna or marlin steaks (about 3/4 inch thick)
•1/8 tsp red pepper (crushed)
•1/4 tsp kosher salt
•1 tbsp lime juice
•3 tbsp olive oil
•garnish: lime wedges (optional)
Ingredients for Melon and Jicama Salsa
•2 cups jicama (peeled & chopped)
•1 tbsp fresh cilantro or parsley (chopped)
•1 cucumber (peeled & chopped)
•1 orange (peeled & chopped)
•1/2 tsp chili powder
•1/4 tsp salt
•1 tsp lime juice

How to:

•If the fish steaks are too large, cut into smaller serving sizes (about 6)
•In a bowl, mix the oil, lime juice, salt and red pepper
•Place the fish steaks onto a shallow pan
•Pour the mixture over fish, turn to coat and marinade for 30 mins in refrigerator
•Remove fish from marinade, reserve the marinade
•Cover and grill the fish steaks on medium heat for about 10 mins
•Brush each side 2 to 3 times with marinade sauce
•Remember to turn once ONLY
•Fish is cook when the fish flakes easily with a fork
•Discard any remaining marinade
•Serve the fish with salsa and garnish with lime wedges
•How to make Melon and Jicama Salsa: Mix all the ingredients in a bowl
•Cover and refrigerate for about 2 hours to blend all flavors
•This melon and jicama salsa recipe will make about 3 cups

Grilled Vegetable Tortillas
Ingredients:
•1 tbsp butter
•1 1/2 cup Colby-Monterey Jack cheese (shredded)
•6 whole wheat flour tortillas
•1/2 cup red capsicum (diced)
•1/2 cup yellow capsicum (diced)
•1/2 cup chayote or zucchini (diced)

How to:

•In a small bowl, mix both capsicum and chayote
•Spoon about 1/4 cup of the vegetable mixture down in the centre of each tortilla
•Top with 1/4 cup of the cheese
•Fold the tortilla into thirds over the filling
•In a skillet, melt butter over medium heat
•Place at least 3 filled tortillas at a time, using the steam side down first onto the butter
•Cook for 6 mins, turning after 3 mins till golden brown
