Mexican food recipes offer another world of tastes to your dining experience. Welcome to our website about mostly Mexican food. Included in this website are some of our favorite Mexican food recipes that we would like to share with you. Most of the ingredients found in Mexican cooking may be familiar to you already and most of readily available in any major supermarkets. With increasing exposure to Mexican food and culture, we now have access to ready-made items like tortillas, fresh (or canned) jalapeno chilies and re-fried beans.

Caramelized Carnitas
Ingredients:
• 1 1/2 lbs pork boneless shoulders (cut into cubes)
• 2 tbsp brown sugar
• 1 tbsp tequila or orange juice
• 1 tbsp molasses
• 1/2 tsp salt
• 1/4 tsp pepper
• 2 cloves garlic (chopped fine)
• 1/3 cup water
• 1 green onion (sliced)
How to:
• Place pork in a single layer in a skillet
• Top with brown sugar, tequila (or orange juice), molasses, salt & pepper, garlic and water
• heat to boiling then reduce heat to low
• Simmer uncovered about 35 mins, stir occasionally till water has evaporated and pork is
slightly caramelized
• Sprinkle with green onion
Garlic Shrimp
Ingredients:
•36 medium shrimps (prawns) in shells
•15 cloves garlic (3 whole & 12 minced fine)
•3/4 tsp salt
•3/4 tsp pepper
•3/4 tsp white vinegar
•3 tbsp olive oil
•5 tbsp butter
•3 tbsp lime juice
How to:
•Split shrimp down in the middles without separating them completely using the underside
•Remove any dark veins
•In a blender, puree whole garlic cloves, salt & pepper and vinegar
•Marinate shrimps in mixture for 30 mins
•Heat oil and butter in pan
•Add minced garlic and sauté till brown (3 mins)
•Add shrimps with shell side up
•Lower heat, cover and cook for 2 to 3 mins or till shrimps turn opaque
•Sprinkle with lime juice and remove from heat
New Potatoes with Garlic
Ingredients:
• 2 lbs very small new potatoes (unpeeled)
• 8 cloves garlic (minced)
• 1/2 cup butter
• 1 tbsp oil
• salt & pepper to taste
• 1 1/2 tbsp lemon juice (optional)
• 1/2 tsp Tabasco sauce
How to:
• Cook potatoes in a pot with salted boiling water till tender (20 to 25 mins)
• Drain and set aside
• In a pan, heat butter and oil
• Add potatoes and sauté for 8 to 10 mins
• Add in garlic, salt & pepper, lemon juice and Tabasco sauce
• Lower heat, cook for 3 to 4 mins or till garlic turns golden color
Baked Snapper with Bacon and Capers
Ingredients:
• 4 small snapper
• 1 tbsp capers
• 2 rashers bacon (chopped fine)
• 1 tsp olive oil
• 1 small onion (chopped fine)
• 1/4 cup white wine
• 3 tbsp sour cream
• 1/2 cup cream
• lemon juice to taste
• ground pepper to taste
• lemon wedges (for garnish)
How to:
• Preheat oven to moderate
• Place fish side by side in an ovenproof dish
• Sprinkle fish with lemon juice and pepper, set aside
• Heat oil in pan, add onion and bacon
• Cook till onion becomes transparent
• Stir in wine, capers, sour cream and cream
• Pour over fish
• Bake for 40 mins or till fish flakes easily with fork
• Garnish with lemon wedges
• Serve with grilled vegetables or a side of fresh green salad
Bream with Tomato and Cheese
Ingredients:
•4 medium bream fillets
•3/4 cup Cheddar cheese (grated)
•2 medium tomatoes (peeled, seeded & chopped fine)
•1 small onion (chopped fine)
•1 tbsp tomato paste
•1/2 tsp ground cumin
•1/2 tsp ground coriander
•1/4 tsp ground pepper
•1 tbsp lemon juice
•3 tbsp butter
•1/2 cup fresh breadcrumbs
•Tabasco
How to:
•Preheat oven to moderate
•Brush an oven tray with melted butter or oil
•Place chopped tomatoes in a small bowl
•Add onion, tomato paste, cumin, coriander and Tabasco sauce
•Mix well and set aside
•In a separate bowl, combine pepper, lemon juice and butter
•Place sea bream fillets on prepared tray
•Brush each fillet with tomato mixture
•Sprinkle with combine cheese and breadcrumbs
•Bake for 15 mins or till fish flakes easily with fork
•Serve hot with salads and warmed tortillas
Steak Mexicano
Ingredients:
•1 lb beef tenderloin (or boneless top loin steak) - cut to 1/2 inch thick
•1 tbsp corn oil
•1 medium onion (chopped)
•1 can chunky tomato sauce
•1 tsp chili powder
•1/3 cup sour cream
•1 tbsp cilantro (chopped) - use parsley if prefer
•1 tsp ground cumin
How to:
•Cut beef across the grain into strips
•In a skillet, heat the oil
•Cook beef and onion, stirring occasionally till beef becomes brown
•Stir in the tomato sauce, chili powder and cumin
•Heat to boiling, reduce heat to low
•Cover and simmer for 15 mins or till beef is tender
•Spoon into a serving dish, top with sour cream and sprinkle cilantro leaves
Chayote Salad
Ingredients:
•2 lb chayote
•1/2 red onion (sliced thin)
•6 tbsp olive oil
•1/3 tsp salt or more
•1 tsp dried oregano
•3 tbsp red wine vinegar
How to:
•In a saucepan, place chayotes (unpeeled)
•Cover with water, add a pinch of salt and cook covered for 30 to 40 mins or till soft
•Drain and let cool for 5 mins
•Peel chayote, cut into strips
•Chill in refrigerator
•In a bowl, combine oil, vinegar, salt, pepper and oregano
•Blend well
•Just before serving, mix chayotes with dressing, top with onion and sprinkle with more
oregano if wish
•Let stand for 5 mins before serving
